The international scientific community prepared an extensive information base, which, after the necessary experimental testing can be successfully used to create the prerequisites of radiation technologies development in the food industry. Radioresistance of microorganisms is very different for various microorganisms. The objects of the electron beam exposure were microorganism suspension of Gram-negative bacteria Escherichia coli and of Gram-positive bacteria Staphylococcus aureus. Research was carried out on X-ray sterilization plant with local bio-protection, which is located at the Moscow Radiotechnical Institute of Russian Academy of Sciences. Studies have compared the results of microorganism radioresistance index, obtained by irradiation with accelerated electrons of varying intensity. It is established that the irradiation of relatively small doses possible to reduce the concentration of opportunistic strains of microorganisms examined. The results can be applied to development of evidence-based radiation treatment modes, that allowing ensure microbiological safety of food products and agricultural raw materials.
